A spicy mayo with curry powder, turmeric and a chile powder called gochugaru. This curry flavored condiment can be used on sandwiches, wraps, used as a fry sauce, spread on crab cakes or used as a condiment on tappas or crudités. Only 4 ingredients, comes together in under a minute. If you don’t have gochugaru, no problem, substitute for your favorite chile powder.
I still have a few sweet potatoes left from the large bag that I bought at the big box store. I leave it on the counter so I don’t forget I have these. This little pearl of wisdom I give to you; if you need to use up something, leave it on the counter, you will see it everyday, and you will use it.

Any-hoo, I set out to make sweet potato fries, because they are so good and as long as they are baked, healthy right? Then I started thinking about fry sauce, because it’s not healthy, of course. I looked at the baked fries and was craving a curry-flavored mayo to go with. I took a few minutes to experiment and came up with this concoction on my second try. Folks, this is so good, I had to make a separate post about it so that I can refer back to it in the future, because, you will be seeing this again, that’s a promise.

A spicy mayo that can be used as a fry sauce.
Ingredients
- 1 cup mayonnaise
- 1/4 tsp turmeric
- 1/4 tsp curry powder
- 1/2 tsp gochurgaru, may substitute your favorite chile powder
Instructions
- Mix all ingredients in a small container, refrigerate until ready to use. If you use store bought mayo, it will probably last a long time in the fridge.
