Mandarin Orange Smart Popsicles

A healthy, fun, easy, Summery dessert just for you!  This healthy popsicle recipe is guilt free and Syn Free made with non-fat drinkable yogurt and mandarin oranges.  Just 3 ingredients plus a little water, easy!

I hope you are having as much fun with this Summer Popsicle Series as I am.  My goal was to have some healthier options for hot Summer days.

The quest to develop healthy popsicle recipes led me down an endless path of fresh and frozen fruit, yogurt, cottage cheese and almond milk.  It’s been a delicious experience for me, learning what I like in popsicles and discovering popsicle friendly ingredients at the supermarket.  I encourage you to do some experimenting.  If it doesn’t quite turn out like you expected, no worries, try again.  After awhile, you will intuitively know what will be great in your creation.

Something to remember are that frozen desserts ‘freeze’ your tastebuds and  taste better if they are warmed up a little bit before eating.  I don’t mean melt your frozen dessert, just let it rest 2-5 minutes at room temperature before eating.  This also means you need a stronger taste in your popsicle mixture.  In this recipe I used a whole can of frozen OJ concentrate to compensate for the diminished taste in frozen desserts.  Try a little experiment by setting aside some popsicle mixture in the refrigerator while your pops are freezing.  Do a side by side taste test.  You will see your mixture tastes different when it is frozen.

I tried drinkable yogurt from Siggis called Filmjölk.  I included the label in the pics to show you what it is and all the good live cultures in this.  It tastes a lot like plain yogurt or buttermilk.  It’s great for popsicles!  This popsicle recipe is a little tart so if you wanted a sweeter version, simply substitute vanilla Filmjölk or vanilla yogurt.

Mandarin Orange Smart Popsicles

An easy and healthy popsicle recipe with only 3 ingredients.  This dessert is also Syn Free!

Ingredients

  • 2 cups of Siggis FilmJolk drinkable yogurt (may sub plain or vanilla yogurt for a sweeter version)
  • 1/2 cup water
  • 12 oz frozen orange juice concentrate
  • 11 oz can mandarin oranges

Instructions

  1. Place first 3 ingredients into a blender or food processor and blend until smooth.
  2. Pour popsicle mixture into popsicle mold leaving a space at the top.
  3. Place mandarin orange slices in the mold.
  4. Freeze at least 3 hours.

Notes

If you want the orange slices at the bottom, partially freeze the popsicles then place the orange slices in the bottom.
